It’s been a little heavy around here lately. I apologize. But… I also don’t apologize because this place is for honesty and showing up in whatever mess you find yourself in. It’s just been one of those patches.

These are my eats from Monday. A pretty typical school day, with very simple eats. It was a really nice day. Not too busy but with a nice mix of productivity and down time. Oh…and all those bully voices in my brain decided to finally take a CHILL PILL (I scared them away with my fierce boxing gloves and Xena Warrior Princess skirt).
Oh and the weather was damn beautiful. Mmmmmm fallllll.
Oh… and I even had time to take a few pictures.
Usual morning at home. Alarm goes off at 5:50, I press the snooze button consecutively for half an hour (please tell me I’m not the only one that does this?). Get ready, do my routine of cleaning/yoga/breathing/stretches, then put the coffee on!

Classes took up the morning, but then it was nice enough to take my lunch outside. It was probably still a bit chilly, but we’ve been having such cold weather lately that it felt like Bermuda.
Another very simple, typical school lunch. Really though, sandwiches. Nothing beats them.
Salami + Mayo + Dijon + tomato/lettuce on whole grain
+ baby carrots
Okay, so this post is beginning to make me feel like I’m 10 years old.
And looks like my snack doesn’t help that situation either.
I had another baking party on Sunday night, even though I wasn’t quite through my last batch. I obviously had to try my new creations, so I just packed one of each! Finish off the old and get started on the new.
Cookie Smorgasbord! These Pumpkin cream cheese cookies of Amy’s, which were new to me and absolutely UNREAL
My own experiment of a gluten free pumpkin chocolate chip, which were good but may need a second crack
These cream cheese little guys (altered slightly and made with chocolate cream cheese)
And my go to Black Bean Zucchini from Alexis
+ coffee (there, does than mean I’m a little older now?)
I got out of rehearsal a bit earlier than expected, so I had time to actually make and plate a nice meal for myself. Even though it was still ridiculously simple and one of my “go to” meals when I just want something I know I love. Sweet Potato Nachos! Or Sweet Potato Mexican Poutine?!
Basically, I cut a sweet potato into fries, toss them in EVOO, cumin and chili spices and roast them up in the oven. Meanwhile I sautee some black beans, tomatoes, peppers, onions and garlic in a skillet with the same spices. Jumble all the fries together on the pan, pile on the bean/pepper mix, sprinkle with cheese and throw it all back in the oven until the cheese is supa gooooey.
Top with green onions and – if you have it – avocado or guacamole. Sadly I didn’t think ahead so didn’t have one. But if I did, you better believe there would have been a big dollop of the good stuff.
I ended off my night with one of these new obsessions.
